How To Make My Favorite Peach Summer Salad

I kid you not, I’ve had this salad at least once a week for the last 3 weeks. Yep, it’s that good.

Something you may not know about me, I’m not a big fruit person. I’m also not one to enjoy fruit in my salad (or pizza, but that’s a whole nother issue), so it’s a bit surprising to me that my current food obsession is a salad with fruit in it. In quarantine, I’ve discovered that if I am going to enjoy fruit, I have to balance it out with savory flavors. Enter in, my favorite peach summer salad. Let’s just jump right in with the recipe, shall we?

What you’ll need:

Dressing:

  • 2 tablespoons of olive oil
  • 1 tablespoon of balsamic vinegar
  • 1 tablespoon dijon mustard
  • 1 tablespoon honey
  • Salt and pepper

Salad:

  • Spring mix lettuce pack
  • 2 peaches, sliced or chopped
  • Chopped red onions
  • A hand full of chopped pecans
  • Grilled chicken strips
  • Goat cheese crumbles

Directions:

  1. Whisk together dressing ingredients and set aside
  2. In a large salad bowl, add salad ingredients
  3. Drizzle dressing over top and toss to combine
