I kid you not, I’ve had this salad at least once a week for the last 3 weeks. Yep, it’s that good.
Something you may not know about me, I’m not a big fruit person. I’m also not one to enjoy fruit in my salad (or pizza, but that’s a whole nother issue), so it’s a bit surprising to me that my current food obsession is a salad with fruit in it. In quarantine, I’ve discovered that if I am going to enjoy fruit, I have to balance it out with savory flavors. Enter in, my favorite peach summer salad. Let’s just jump right in with the recipe, shall we?
What you’ll need:
Dressing:
- 2 tablespoons of olive oil
- 1 tablespoon of balsamic vinegar
- 1 tablespoon dijon mustard
- 1 tablespoon honey
- Salt and pepper
Salad:
- Spring mix lettuce pack
- 2 peaches, sliced or chopped
- Chopped red onions
- A hand full of chopped pecans
- Grilled chicken strips
- Goat cheese crumbles
Directions:
- Whisk together dressing ingredients and set aside
- In a large salad bowl, add salad ingredients
- Drizzle dressing over top and toss to combine
